Pineapple Chicken Carnitas

Pineapple Chicken Carnitas

One of my friend’s posted a picture of her homemade carnitas the other day, and they sounded soooo good! I didn’t have pork on hand, but I did have a half a pineapple and some chicken, so I figured “why not”? Served with corn or flour tortillas or a side of rice, and it’s a satisfying super yummy meal!

Makes 2 servings

Ingredients:

  • 8 oz thoroughly rinsed and drained chicken (shredded)
  • 1/2 cup diced green onions
  • 1/8 cup brown sugar/Splenda blend
  • 2/3 cup (4 oz) chopped pineapple
  • 3/4 cup water
  • 1 squeezed medium lime
  • 1 tsp ground cumin
  • 1 1/2 tbs chili powder
  • 1/4 cup chopped cilantro
  • 1/4 tsp minced garlic
  • 1 tbs olive oil

Directions:

  1. Add a tbs of olive oil to pan and heat over medium. Dice or thinly slice green onions and pineapple and add both to the pan.
  2. Add spices and stir.
  3. Rinse and drain chicken thoroughly.
  4. Add all remaining ingredients to the pan, stir, cover, and let simmer on medium low for 15-20 minutes.
  5. Serve with a side salad, cheese, Greek yogurt, and tortillas if desired (not included in nutritional breakdown)

Note: You can also add all ingredients to a slow cooker and let it simmer throughout the day.

Cheesy Corn Bake Substitute

Sweet Corn Casserole Baked Oatmeal

Sweet Corn Casserole Baked Oatmeal

One of my favorite sides at Thanksgiving and when we hit the Cheesecake Factory is Corn Casserole. I figured why not try it baked oatmeal version? The end result? Every bit as yummy as the real thing, low in fat, and full of flavor! Enjoy!

Makes 1 serving

Ingredients:

  • 1/3 cup corn
  • 1/3 cup water
  • 1/2 tsp baking powder
  • 1/8 tsp sea salt
  • 1/3 cup old-fashioned oats
  • 1/3 cup egg substitute
  • 3 tbsp nonfat cottage cheese
  • 1/2 tsp vanilla extra
  • 1/4 tsp butter extract
  • spray butter (optional)
  • agave or sf honey (optional)
  • sugar substitute to taste

Directions:

Blend most of corn in a mixer along with water. Add to baking dish. Mix in all other ingredients. Add 1/4 tsp butter extract and sugar substitute to taste. Bake in an oven preheated to 350 degrees for 30 minutes. Drizzle with almond milk, butter spray, and a little bit of sf honey or agave syrup (honey, agave, and almond milk not included in nutritional breakdown).

Sick of rice cakes? Try this surprisingly not so naughty snack:

Waffle Sandwich

2 Eggo buttermilk waffles

1/2 TBL peanut butter

1/2 TBL sugar free blackberry preserves

 

Calories: 250

Fat: 12 grams

Carbohydrates: 27 grams

Sugar: 2 grams

Protein: 7 grams

 

In my opinion, it beats the heck out of dry rice cakes, and it's super filling!
